OWNER/ EXECUTIVE PASTRY CHEF/ CAKE ARTIST
Nickol-Hayden-Cady has been cheffing since adolescence, raised in kitchens from the West to East Coasts. By 21 she had skipped over the pond we call the Atlantic Ocean to work in European Kitchens and orient herself to the traditional foundations. This beginning launched her into a career where quality is uncompromised. The kitchen has been synonymous with the heart since her childhood days. Her Bisavo, Portuguese grandmother, initiated her to hard work and dedicated to the food that sustains us. She lives, plays, and creates in Bend, OR. She is an award winning pastry chef and wedding cake artist and is excited for the new possibilities to manifest into her vision of a teahouse/dessert bar.
Nickol Hayden-Cady has been working in the culinary industry for over twenty five years. She has earned her Pastry Arts Degree from the Culinary Institute of America in Hyde Park, NY. Nickol has worked under celebrity chefs, James Beard awarded chefs and Michelin star chefs in California, Seattle, New York, London and Oregon.
Foxtail Bakeshop came to life in 2013. Her first son's nickname while he was in the womb was baby Foxtail, he was such a gift to her and her husband that Foxtail was the start of her dream to open her own whimsical place for the community and an experience for the public to enjoy thoughtful food, decadent pastries, and wonderful coffee & cocktails.
Since selling her large brick “n” mortar Foxtail Bakeshop & Kitchen in 2022. Nickol has been consulting all over the West Coast and writing her first cookbook that launched Winter 2023 “Foxtail Bakeshop Presents... Treats from the Den. She is currently working on opening a tea house and dessert bar in Bend Oregon.
